Three is the count with the clearest answers. Nines (5-3-1) and Split Sixes (4-2-0) were built for threesomes, Wolf and Banker adapt cleanly, and a Ghost partner turns three players into a 2-v-2 game whenever you want one.
Nines is the default for a reason: every hole redistributes nine points, so nobody is out of it. Play Split Sixes when you want bad holes punished harder, and add a Snake or Skins pot on top of either.
